I haven’t owned sourdough culture for many years and when I decided I wanted to establish another batch and bake some sourdough bread, all roads led to the King Arthur Baking School. The course was great, we made a ridiculous amount of bread AND we got to take home our own sourdough culture.
The biggest take-home message was that having sourdough culture is like having a pet! You need to feed it and maintain it and even name it. Apparently we now name our winter storms and the one that hit while we were inside feeding our sourdough and baking up a storm was called Stella. Guess what I am calling my sourdough…!
